Hemp Seed Banana Bread

Quick Breads are one of my favorite things to make, most likely because I grew up eating them. Side shout out to the fresh pumpkin bread from Clyde’s Cider Mill in Mystic, CT that I would look forward to every Sunday in the fall as a child. Quick breads are any number of breads like pumpkin, blueberry, zucchini, or the more commonly known, banana bread! If you are new or hesitant to baking, quick breads are absolutely the place I would suggest starting with, as they are so easy and delicious.

Things I love? Fresh baked pastries in the morning. Things I hate? The amount of effort and time and pre-planning it requires for most baked goods. The solution? Banana bread! No rising or proofing, no complicated measurements to get the sciences exactly right, Banana Bread is the perfect solution for an easy and delicious breakfast pastry.

Banana Bread is such a fantastic American Classic breakfast recipe. And since it is based on finding a use for bananas that are getting old, as opposed to throwing them out, of course we are a huge fan! By adding hemp seeds to your (or ours!) banana bread recipe, you now have a great protein power boost to something that otherwise has a habit of getting overly heavy and sweet quickly. The recipes are also fairly forgiving, unlike baking something like a loaf of bread that requires a lot more precision. If you end up with a little more or less of an ingredient, it will still turn out just fine! You may even make it better for your own tastes.

Ingredients:

Hemp Seed Banana Bread

1 Cup Mashed Bananas about 3 bananas – The riper the better! If there is any green on the banana, they are not ready to be used for baking. The more a banana ripens, it is breaking down and converting it’s carbs into sugars to make it more sweet. You want the dark spots on the peel, and don’t shy away from dark spot on the bananas themselves, it is perfectly edible!

5 Tbsp Coconut Oil – or any neutral oil is okay. Coconut is your healthy option, and is a always a good option in baking as it adds a bit of sweet flavor with the oil that you would not get out of something like Olive Oil. You could certainly use Hemp Seed Oil here as well, but I wouldn’t consider it a neutral oil, especially in this recipe, and you will have the hemp oil flavor coming out fairly pronounced in the recipe.

0.5 Cup Honey – Any sweetner will work, but using honey whenever possible is recipes is preferred. You’r going to get a much more natural sweetness base versus an overly refined sugar, as well as some great antioxidants.

2 Large Eggs

1 tsp Vanilla Extract – Quality always matters with vanilla extract. A big bottle of generic brand is going to need 3-5x or more than a small more expensive bottle of a quality brand.

2 Cup Flour – Can be substituted for a gluten free option such as oat flour. Will make the bread much more dense, but doable.

3 tsp Baking Powder

1 tsp Cinnamon – To taste a bit here. I love cinnamon and could easily use triple the amount here, but it’s not for everyone. Cinnamon adds a lot of health benefits too, so I would encourage the more the merrier!

0.25 Cup Hemp Seeds

1 tsp Salt

 

Maple Glaze (Optional, but delicious!)

0.5 Cup Powdered Sugar – This will have impact on the consistency, so keep it handy as you may be adding more to thicken it

2-3 Tbsp Coconut Milk – Any milk will work here, if you happen to have hemp milk available even better!

2 Tbsp Maple Syrup – Try to go for the good stuff here. The flavor difference, especially for the glaze, between real maple syrup and imitation sugar water is huge!

1 Dash Cinnamon

Instructions:

Preheat oven to 350 and grease your 9×5 loaf pan – You could use a different size pan, mini loaves, or even muffin tins here, but just make sure to adjust the temperature and/or baking time appropriately.

Mash your cup of bananas, then mix together with eggs, coconut oil, and honey – Tip for measuring, measure out your oil first, then the honey, and the oil remnants in the measuring tool will help the honey slide out.

Add in flour, baking powder, cinnamon, salt, hemp seeds, and vanilla. Fold thoroughly

Transfer mixture to loaf pan, and bake for 50-55 minutes – Make sure you have a good amount of room in your loaf pan for it to rise, like below. If you try to double the recipe and completely fill a loaf pan before it even begins to bake, I promise you will have a bad time cleaning our your oven after.

Maple Glaze

Whisk together powdered sugar, coconut milk, maple syrup, and cinnamon. If it appears too thin, add more powdered sugar to thicken it. If it appears too thick… it’s not.

Wait for banana bread to cool! The easiest step that is guaranteed to be the one more skipped. Trying to just dump the glaze on a hot banana bread because you cannot wait to eat it will result in a puddle of glaze around your bread and nothing on top.

Drizzle glaze onto banana bread. You could brush it on, try to drizzle with some fancy patterns, or honestly just slow pour it on from the bowl.

Garnish with a few more hemp seeds on top for some extra presentation points.

If you managed to withhold temptation and let it cool for the glaze, then you now have a beautiful loaf of banana bread ready to serve! Slice and serve with butter, jam, or my favorite is to put a nice thick layer of peanut butter on it. You can also griddle the slices with butter to make a delicious crispy slice. Great for day two if it makes it that far. Or even turn it into french toast. A whole second recipe we may roll out later this year would be turning this hemp seed banana bread into an amazing delicious Bananas Fosters French Toast!
