The Origin – Ethiopia  – Single-Origin:

Named as a tribute to the motherland of the coffee species itself, Ethiopia, our single-origin offering is a very special coffee indeed. This USDA certified organic single origin Ethiopian comes from the oldest coffee growing region in the world, Sidamo. With it’s ancient origins, this old world varietal now exhibits a high degree of genetic variability and tends to produce ripe cherries with beans in a wider variety of shapes, sizes and colors than most coffees. This makes the bean rather tricky to roast but produces a very visually appealing coffee and adds a wonderful complexity and depth to the cup. This high elevation heirloom Arabica bean is roasted to a light-medium level and produces a bright and delicately balanced cup of coffee. As a natural process bean, our Sidamo is dried in the coffee cherry imparting a delicious fruity flavor of apricot and honey with strong notes of blueberry building towards the finish. As the coffee cools, flavors of cacao and gentle molasses develop in the cup. This complex and delightfully balanced coffee is sure to brighten up any morning!

New Mountain Blend:

The New Mountain Blend combines three of our favorite Arabica coffees from around the world. We begin with a Brazilian backbone from the Saquarema farm high in the mountains of Poços de Caldas just north of São Paulo. This washed Bourbon varietal brings big overtones of chocolate and caramel to this full bodied robust blend. Next we add a rare wet processed Bugisu coffee from near the famed Sipi Falls on Mt. Elgon in Uganda. This lighter bodied coffee builds on the chocolate notes adding a mild acidy and hints of burnt sugar. Finally, to complete the structure of the coffee, we blend in some of our Sidamo. The dry processed Ethiopian heirloom bean adds the sweet flavor of blueberries and some high notes of delicate apricot. The three varietals are roasted individually to a Medium Viennese roast to create a rich bold cup while preserving the lighter, sweeter flavor notes that enhance this round robust blend.

How do we infuse? High quality coffee beans have about 15% fat, and cannabinoids such as CBD bind to fat. During the roast, these naturally occurring oils in the coffee beans become more active and  exposed, and we directly infuse them once the beans have cooled and are degassing during the curing process. Our coffees are infused at a 1:1 ratio of milligrams of CBD to grams of coffee for easy measuring.
